Vegan one pot meal recipes are very desirable to make. Perhaps it is because they are quick, fuss free and well rounded! Plus I think we all prefer less washing up haha!

This week I decided to take a dive into my fridge and make a delicious one pot meal with whatever vegetables I had left over in there.

You can swap out for almost any vegetable that you might have available.

I’ve added red lentils to bump up the plant-based protein content. And potatoes, fresh herbs and vegetables to make it a whole, complete meal within itself.

How to make a vegan one pot meal

The secret to making a good vegan one pot meal is to make sure that you have a good balance from the different food groups.

  • This means using a plant powered food with high in protein. In this case I’ve used lentils, but peas, or any bean or legume would work well as a swap.
  • It also means using something starchy like potato or a super healthy ‘grain’ like millet or quinoa. All of which have completely different, but beneficial nutrient profiles. I recommend using them interchangeably on different days. I’ve used potato today for this one pot recipe as it works especially well.
  • Use different vegetables for a blend of minerals, minerals and antioxidants. The best plant-based diets contain a plethora of different vegetables. You’ll find different nourishment from each vegetable, which means bringing in several vegetables is going to cover a few different bases for you.

Ideal vegan one pot for making in a slow cooker or thermal cooker

If you have a slow cooker or thermal cooker then this is an excellent recipe for melding the flavours together and softening the veg to prefection. If you don’t have one then it works beautifully without it too.

Having a slow cooker mean that you can pop it in early in the day and find that it is ready for you later on with all the flavours having entwined and melded together. It also means that it will be hot and ready to go without having to reheat it when you get home.

I have a thermal cooker (and electricity free alternative to a slow cooker) which works like a large thermos flask.

Easy Vegan One Pot Meal - lentil, potato, vegetables

Cook Time: 25 minutes
Total Time: 30 minutes

An easy vegan one pot meal recipe. Ideal for the slow cooker or thermal cooker if you have one.

Ingredients

  • 150g red lentils (¾ cup)
  • 600ml water (2½ cups)
  • 1 large leek
  • 3 celery stalks
  • 1 large potato
  • 3 large carrots
  • 300g (11oz) cabbage
  • 2 teaspoons sea salt
  • Handful fresh rosemary
  • Handful fresh parsley
  • 2 tablespoons ground coriander
  • Large twist black pepper

Cashew Cream Ingredients (optional)

  • 40g cashew nuts
  • 1 teaspoon turmeric powder
  • 1 heaped teaspoon onion powder
  • 100ml water (just under half a cup)

Instructions

  1. Chop your leek, potato, carrots and cabbage into small pieces.
  2. Destalk and finely chop your fresh rosemary. If you don't have it you can swap for dried herbs.
  3. Put all of the ingredients (except the cashew cream section) into a pan. I used a 3 litre (5+ pints) pot, which was perfect for this amount.
  4. Bring the contents to the boil and then reduce to a simmer. Let it cook for about 25 minutes. If you have a slow cooker you can cook in there instead.

Cashew cream option

  1. If you want to take your one pot meal to a whole new level then I recommend adding this homemade cashew cream. I tend to add this one the stew has cooked for a little while.
  2. Simply blend the cashews, turmeric, onion powder and water together in a bullet blender until the cashews ar all broken down and have become smooth. In a powerful blender this will be done within 60 seconds.
  3. Once blended pour into the stew.

Ready to eat!

  1. It's ready to eat now.
  2. You can let it infuse all day in a slow cooker from the start if you prefer. Otherwise just reheat as needed.
  3. It will keep for a few days in the fridge. It freezes nicely too.
