OK wild garlic recipes let’s go!

Wild garlic (Allium ursinum) also known as ramsons, deck the floors of woodlands in the springtime in the UK. They are also found in countries with other similar climates. They have an unmistakable zingy garlic aroma, so you can’t really miss them.

In this article I am sharing some of my favourite wild garlic recipes. They are all incredibly easy to make.

1. Wild garlic olive tapenade

With only two ingredients this is perhaps my favourite wild garlic recipe. And that’s saying something as I am not generally a fan of olives. Wild garlic tapenade is ridiculously simple to make. It can also be frozen in batches so that you can enjoy your wild garlic delights well after the season has ended.

2. Wild garlic potato patties

Simple to make, this is a great way to use up left over potatoes, creating an excellent lunch box snack. I’ll also enjoy these potato patties with a main meal, part of brunch or lunch.

You can freeze them, making them an excellent option for batch making.

Wild garlic potato patties recipe

    • 550g potatoes
    • 50g wild garlic
    • 1 teaspoon sea salt
    • Twist of black pepper
    1. Cook the potatoes (or use your leftovers), then mash them thoroughly.
    2. Chop the wild garlic into tiny pieces.
    3. Add salt and pepper and mix/squish everything together.
    4. Form patties (see video).
    5. Grill until tanned on each side. You can also cook in an air fryer, oven or fry them.

3. Wild garlic & shiitake mushrooms

Sautéed in a very light dash of oil and water, this wild garlic recipe with shiitake mushrooms makes for a highly nutritious addition to any meal. You can swap the shiitake mushrooms for any mushroom.

I’ve also done this with chestnut and oyster mushrooms, as a shiitake alternative for a yummy feast of deliciousness.

Wild garlic shiitake mushrooms recipe

    • 150g shiitake mushrooms
    • 100g wild garlic
    • 2 teaspoons sesame (or any) oil
    • 2 teaspoons shoyu or tamari
    1. Slice your mushrooms and sauté them in the oil until they are cooked. Add in a splash of water if they start sticking to the bottom of your pan.
    2. Add the wild garlic one the mushrooms are cooked.
    3. Use a tiny splash of water along with the tamari and mix in.
    4. Cook throughly for a few minutes until they’ve condensed down.
    5. Enjoy!

4. Wild garlic dal

Another simple wild garlic recipe. With red lentils this is an excellent way to get your protein. Quick to make, although if you have time, this is utterly amazing to slow cook it or reheat the next day.

5. Wild garlic pesto

This is a delicious wild garlic pesto that I created many years ago with a bit of coconut cream to bring it up to a whole new level of deliciousness.

It goes really well with pasta or soba noodles.
